番茄红素是一种类胡萝卜素，经国内外学者研究证实，番茄红素具有很强的抗氧化作用，其氧化作用是β胡萝卜素的3倍，维生素E的100倍，它通过保护机体细胞免受氧化伤害而实现其生理活性能有效地防治前列腺癌、胃癌、皮肤癌等。
